Cupping Profiles of the four types of 100% Molokai Coffee.
Muleskinner - BLIND ASSESSMENT: A deeply sweet, lavender note dominates the distinctive aroma, with a backgrounded heavy, pruny fruit. In the cup the prune-toned fruit moves forward, with a nod toward dark chocolate and a continued suggestion of lavender. Full body, low acidity, slightly astringent mouthfeel. A coffee that seems exotically hearty at one moment and can seem sullenly heavy at the next.
WHO SHOULD DRINK IT: Those interested in exotic dry-processed profiles. If I felt comfortable giving high ratings for uniqueness alone, this coffee would merit a rating over 90.

Malulani Estate - BLIND ASSESSMENT: An impressively sweet, cocoa- and dark-chocolate toned coffee with a silky mouthfeel and gentle acidity...a hint of the chocolate-cocoa note persists pleasantly in the finish.
WHO SHOULD DRINK IT: Lovers of gentle, low-acid, cocoa-toned coffees.

Molokai Island Princess - BLEND ASSESSMENT: A sweet vanilla aroma creates a fragrance that is powerful and plesent. In the cup buttery, mellow tones linger and grow with each sip. Sweet but not to sweet. WHO SHOULD DRINK IT: For the coffee drinker who conjures memories of distant islands with a sharp aroma and taste of 100% Polynesian vanilla beans.

Espresso - BLIND ASSESSMENT: Gently smoky chocolate and cedar notes dominate the aroma, with hints of flowers and a brandyish ferment. In the small cup medium to full body, velvety mouthfeel, distinct cedar notes with a hint of dark chocolate and bananas. Very impressive short finish, with continued clear cedar-chocolate notes; a hint of heavy astringency mars the long. Balanced in milk, though the chocolate notes remain hostage to a smoky cedar.
WHO SHOULD DRINK IT: Those interested in sampling distinctive single-origin espressos. Probably best as a short straight shot.

Peaberry, also known as caracoli, is a type of coffee bean. Normally the fruit of the coffee plant develops as two halves of a bean within a single cherry, but sometimes only one of the two seeds gets fertilized, so there is nothing to flatten it. This oval (or pea-shaped) bean is known as peaberry. Typically around 5% of all coffee beans harvested are of this form.
Normal coffee beans are less commonly called by contrast flat berry

Peaberry beans roast differently from the corresponding flat berry beans; hence, to ensure an even roast in high-grade coffee peaberry beans are separated.
Peaberry beans are widely reputed to roast better than flat berries, being said to roast more evenly, because their rounder shape minimizes sharp edges and allows the berries to roll about the roasting chamber more easily as well as because the alleged higher bean density may improve heat transfer in the roasting process. However, some sources claim that these effects are minor and that the major benefit of peaberry beans is that they have been carefully selected, which is essential for optimal quality, regardless of bean shape.
